I'm having a go at crafting this time through. Which metal should you choose for crafting armor and weapons respectively, and why?

I think alchem silver is better. Though there are slightly more demons, the worst fights are often with giths or requiring alchem silver.

In Neverwinter Docks, I chose a few dialogue lines with a GOOD intent. But the alignment shift was towards lawful, especially when doing the sweep....

You should be able to yes. The expansions class/feat additions are add in so to speak, and they are available in the original game as well.
