cyrodiil is gettin a little packed for me and i was wonderin if it is possible to create a mod that will actually add more land mass. thanks for any help

Sure! But it will mean learning about how to make mods. Try reading the "How do I make a mod?" section at this site. Alternatively, you can download mods that add more territory. Start with PlanetElderScrolls. Do a search in their Oblivion mods section.

if you add more land how does that show up on the map or does it at all

Depends on how you make it. And for that, you need to check out the link I provided (or others) that tell you how to make Oblivion mods.
