I did a quick search and didn't come up with anything which was surprising..
Anyway I am going to post my build and you can do the same..
Fighter Magic User Thief
Mods: Race Rebalancing, Less Annoying Magic, Persuasion Overhaul, OOO, sniper sneak, realistic leveling, ngcd
Explanation of Race Rebalancing- Changes races and birthsigns. My race bosmer has weakness in magic, resistance to elements, resistance disease, vulnerability poison, weakness magic, moderate regeneration of magicka and fatigue. This is counterbalanced by my sign warrior which gives 10 strength, resistance poison, resist magic, minor resist normal weapons, resist paralysis. So the weaknesses of bosmer are mitigated..
Explanation of Less annoying magic-
Makes magic more fun imo. buffs last longer so you don't have to cast all the time. Much more magica but higher spell costs, just a different balance I am really not remembering vanilla.
Realistic leveling and Gncd- ok leveling training is a thing of the past. Your attributes and skill are smoothly kept track with and level.
OOO- less level scaling and a whole bunch of other stuff. Like morrowind now you can go somewhere dangerous and be rewarded. Challenging to get your power up in the beginning.
Stealth, Magic, or Combat:
ok the goal was to not waste a boost to a skills rate of progress. For stealth speech is a waste because you can totally ignore it for the most part. This is debatable if you are using the persuasion overhaul which makes speech more challenging. I didn't take or want speech because PO is so challenging that it takes forever to level it up. I did install a different mod that makes every dialogue (shops etc) every saying bump the speech up a little. Haven't formed an opinion yet, but PO was too difficult even with stealth and speechcraft as majors. Acrobatics is cool but not super useful it is kinda a flair. Security I don't find useful because I am good at minigame, and hard locks I can't pick but I have tower runestone and scrolls from the dark hooded dude by the large bridge out of imperial city (to left by wall). Combat has even more redundancy you don't need 3 weapons. Armorer you can have the smiths do for you easily. And you don't need both heavy and light armor. So that leaves magic in which every school is useful and alchemy is useful. That leads us to the fighter magic user thief.
Magic User: We take magic focus which makes all these skills level faster though they start slow.
Fighter: Begin with strength and endurance focus and warrior starsign. Major skills- Blade, block, athletics (good for backstabbing too because your base movement is higher).
Thief: Bosmer race, Major skills: Light Armor, Sneak, Marksman (this one is a bear to level so it has to be a major if you want to use...sniper mod helps I think??), Mercantile (going from buy high sell low to even is a big swing in money and money is power...even at high levels more gold can always be used to power up and if it gets ridiculous at high level? Well then marksman helped you get there: training, items, spells, houses, and fun.

Right Speech has four aspects: 1. Not lying, but speaking the truth, 2. Avoiding rude and coarse words, but using gentle speech beneficial to the listener, 3. Not slandering, but promoting friendliness and unity, 4. Avoiding frivolous speech, but saying only what is appropriate and beneficial.
