i have got the helm and gone back to degrodel but i cant stop him from disappearing when he does his summons, how do i stop him from disappearing

Here's my advice : Reload to before you talk to him, 5000 gold pieces is not really not worth it for the Helm Of Balduran. Keep the helm, it's definitely worth it. If you insist on getting the gold however, have your best archers take him down before he is able to leave (That may take a couple reloads)
