The biggest weakness of all is that they only level up when you do (with the exception of some side quest dudes like Umbra). So run around completing the Mage guild recommendations, make a spell that does Drain Health 100 magnitude for one second and rule the world without ever leveling up!!!

Er, the above isn't really totally accurate, you can actually level up to about 7th level before the spell stops being a 'Kill everything' weapon.

Make your enemies weak

Use the Weakness to Fire (Frost, Lightning, Magic) spells to make your enemies weak. I like to enchant a bow with a 100% weakness to fire for about 5 or 6 seconds duration and then keep the biggest ranged fireball spell I have in the ready slot. Shoot the target with the bow (any arrow will do) and then follow it up immediately with the ranged fire spell. Repeat if necessary. You can do the same with any combo (frost or lightning). Never tried it with weakness to magic though. You can also do this with Weakness to Poison and use poisoned arrows (if you have the ability to make the poison potions). The first tactic works the best for me though. I find that most daedra don't fend off Cold spells very well (except for Frost Atronachs of course).
