For increasing the damage I deal would enchanting items with stat enhancements or skill enhancements work better?
Example: +Strength or +Blade/Blunt/Hand-to-Hand
or Agility - Bow

To increase Blade, Blunt or Hand-to-Hand damage it's probably better to use Fortify Strength. It increases the damage you do, plus it lets you carry more loot. Along the same lines, it's generally better to buff Strength than to use Feather, because every 10 points of Strength you gain gives you the equivalent of 50 points of Feather, plus when you smack things it hurts them more.
For Destruction, you're better off buffing your Destruction skill. Neither Fortify Destruction nor Fortify Intelligence will increase the amount of damage a spell does. However, buffing Intelligence gives you a small, finite magicka boost while buffing Destruction decreases the amount of Magicka it takes to cast any Destruction spell every time you cast it (so you can cast it more times before you need to regenerate magicka). Also, you get a bigger magicka boost from Fortify Magicka than from Fortify Intelligence using the same size soul gem or sigil stone.
Not really sure about Agility vs. Marksman. Except for really long distance shots it seems like the player's skill with the controls is far more important determining whether you hit your target than the character's Marksman skill, and I'm not sure if extra Agility or Marksman skill will increase the damage when you hit.

agility and marksman do increase the amount of damage you cause using your bow, another big help is poison and using weakness to poison. if your char is good at alchemy, fightings easy! you can also water walk with ranged weapons and most animals will stand by the water will you fill them up with arrows!
If you do some sneak attacks you can make a spell that buffs your strength and blade for the 10 seconds it takes to deliver that x6 modifier blow...kinda off topic.
I agree to buff strength for a permanent buff since it helps with loot carrying too. I would consider fortifying magicka rather than buffing destruction because magicka fortification will apply to all schools.
