Ok yes, cheating is cheesey, but I've beaten the game and now I want to make a blood-thirsty, evil, demoness of ultimate destruction out of my new character. To do this, I choose to cheat! However, I haven't had much luck getting many of the NWN2 cheats I've been able to find to work. Has anyone else had any luck say adjusting stats or creating items via cheats?

You can use the "debug console" in the game to do this.
How you specifically opens the console, I do not know as it is localized on various keyboards. I have to use ` to do so on a Danish keyboard.
Anyways, in the console there are a ton of commands you can use to modify your character, such as manipulating attributes and levels etc.
And spawn items.
( I think a listcommands will list all the commands, but you will be told that in the console when typing a wrong command.)

I know for a fact that this works for the SetSTR type, but I don't know if it is required or not for giveitem.

Yep, once you got the cheat console working you must type the correct command for the item you want, and it must be something in the game files. To find the ID number, open up the tool set and find the item lists, once you find what you want, look for said ID number.
For example, let's say I want a Feyduster +2.
I go through the toolset and find this item, I jot down the ID number and once I have selected my character (clicked on him) I type in:
giveitem NW_WSWMSS010 1 (don't recall if you have to put "" around it or not...
)
Hit "ENTER" and presto! You get 1 Feyduster +2. If you want multiples of something, change the last number ( the 1 at the end of my example).
