Now, I was wondering one thing: I recently started NWN all over again, and now I began HOTU using the character I finished the NWN main story with.
The Question is, if I still keep Aribeth's ring in my inventory, will it affect the game in some way? Will I be able to talk to Aribeth (as I find her in Caina) in a different way that if I don't have the ring at all?

It will not affect the game, no.
The game-play/story reason for this is that it is (game-wise) infact the character from SoU who enter HotU, and not the one from the original NwN. That is why Deekin and the other SoU NPCs remember you but not Aribeth.
(Although I belive she'll remark that you remind her of the hero from NwN or something, but it has been ages since I've played, so not sure about that)
