On Dantooine, how do I complete the "Jedi Redemption" side quest?
You don't, it's broken.
Occasionally someone will pop up and say that they have completed the quest, but they can never explain how or prove it. More likely they didn't trigger the quest at all: fixing the droid, showing sabers to the mechanic or fixing the meet-and-greet droid are the only ways to get it.
According to the TSL Restoration Project, when they looked at the scripts associated with this quest the trigger events were visibly broken.
