If i were to change my henchmen halfway through the game, then recruit him once more after some time (and after i have gained a few more extra levels), will he be at the level i left him with or will he be at my new level?

If i were to change my henchmen halfway through the game, then recruit him once more after some time (and after i have gained a few more extra levels), will he be at the level i left him with or will he be at my new level?

He will stay at the same level as you left him. But you can talk to him and say that he would be more valuable to you with some more training. But make sure you don't abandon him to many times, he/she might say they have a new boss and you wont be able to recruit him/her anymore in that chapter.
BTW: I am guessing that this is the orginal game and not the expansions.
IIRC the henchmen in the expansions will levelup simultaneously as you if you have them with you, and I think that if you want a new henchie, he will level as soon as he joins you.

I've never experienced not being able to re-recruit a henchmen myself, and I' normally leave each henchmen between 1 and 4 times in some chapters

That only happens if you no longer have the particular item the henchie gives you as a token, such as Tomi's Contract, Dalen's Feather, etc., etc. If this item is not in your inventory when you talk with them, they won't be recruitable.
