2 Questions about the Assassin.
When i have a rogue/assassin, and a do a sneak attack, will i do the rogues sneakattack AND the assassins deathattack, or the one with the highest level.
Second question is about coating weapons with poison, how can i do that?

I do not have the touch, nor do I have the power.
They should stack yes.
As for the poison - well, I would imagine it works like the fire/acid thingys you can coat your weapons in also.
So having it in inventory - right click it and select use. Then it should change to a target cursor which you can use to press the weapon you wish to coat.

final questions, do you think a rogue/assassin will be able to finish SoU and HotU? Or are to many creatures imune to backstab?

There are many creatures later in the games that are immune to backstab/critical strikes. But it should not pose much of a problem - especially if you have henchmens for thoese fights.
Rogues have a lot of abilities, and once they get to higher levels they should be able to survive quite good, especially utilizing some different tactics for the harder fights.
I've just started a rogue in NwN that I plan on soloing through as much of the game as possible, so could possible give some advice later if it is needed. He, however, is "good" so I will not take assassin levels. (only other rogueish character I've played was a figther/rogue my first time through NwN).
Every character and combination can finish the game(s) - it is just a matter of what tactics that are used.
