If this sword were upgraded to a +10 enhancement bonus, would a Pally be able to use it with a +10 enhancement bonus and the bonuses of the holy avenger or would it be set to a +5 for him/her?

Well - that depends on how the upgrade gets done so to speak.
If you increase the Holy Avengers "to hit" property - it would work as you describe I would think. Although I think you need to do some scripting/hacking of the game to get to alter this proberty. I don't know if you could place two Holy Avenger properties on a weapon, and both would be in effect?.
If you increase the sword by giving it a generic "to hit" it would work for all others aswell as the paladin. If the Holy avenger property then would reduce this to +5, is impossible to guess - that depends on the coding of the game.
