In chap 1 Aribeth sells boots of the Sun Soul +1 and +2 and robes (up to Shining hand +2 and robes of the order, I believe)
Loot is random for the most part, so there is no one place or character where you'll find monk items.
I'm going off a rusty memory here, but here's a list of monk stuff:
Robes of the Shining Hand +1, +2, +3, +5 - gives corresponding AC bonus (armor)
(Improved) Robes of the Old Order - soaks 5 damage; improved adds +2 AC (armor)
Boots of the Sun Soul +1, +2, +3, +5 - gives corresponding AC bonus (dodge), +5 also gives +3 dexterity bonus
Robes of the Dark Moon - haste, can't remember what else, if anything
Gloves of the Yellow Rose +1, +3, +5 - gives corr. boost to attack bonus, plus 1 electrical damage
Gloves of the ?? +1, +3, +5 - gives boost to attack bonus, plus 1 (?) cold damage
Gloves of the Hin Fist +1, +3, +5 - boost to attack bonus, plus 2 sonic damage; +5 gives 1d6 sonic damage
Other good stuff: Cloak of Protection +1, +2, +3, +5 (corr. bonus to AC (deflection) and saving throws); Belts of hill, frost, and fire giant strength (+3, +4, +5 to strength); Peripats of Wisdom +1..+5; Amulet of Natural Armor +5 (+5 AC (natural)); Boots of Hardiness +3 (+3 AC (dodge), +3 constitution); Ring of the Rogue from Tomi (up to +4 to dexterity); Ring of Power (lots of insane bonuses, got it for regeneration and freedom). If you're having problems early on, might want to cough up for Brawler's or Swordsman's belts.
As for where you find it... +3 stuff was mostly in Chap 2, +5 stuff in Chap 3 & 4. (At least the stuff you can buy. I got +3 gloves in Chap 1E and Gloves of the Yellow Rose +5 in the troll caves north of town right after starting Chap 2. It's random, though, so tough to depend on.) In Chap 2 & 3 the merchants are mostly all in one area (like City Core) so you can visit them all right away and check out their wares.
