I noticed with my monk that when I give her a two-bladed sword she fights with it but at the same time she also kicks people. This looks really cool, sort of like Darth Maul, and I was wondering whether other classes use their feet while fighting, or is it just the monk? My ranger only ever seems to use her two swords and in a very boring manner I thought.

You might actually do better with the double bladed sword at the lower levels, since you'll have the extra attack with both hands at 1d8 instead of the monk's initial 1d6.
But later on it will severely handicap you, don't worry. Especially with no dual-wielding feats, your base attack will be lower, you'll probably get at least one less attack per round, and you'll still be doing 1d8/1d8 instead of the unarmed 1d20. You also won't be able to take advantage of such gauntlets as Gloves of the Hin Fist +5 (+5 to attack bonus, 1d6 sonic damage), which will offset any advantage from having magical double-bladed weapons.
Btw, I think the kicks are just the monk animation that explains the numerous attacks the unarmed monk gets. Does look cool though, huh? Particularly after knocking some hulking half-orc would-be assassin onto his back. You can watch your monk kick him while he's down.
