Midway through the Planar Sphere, I got lvl up w/ both my PC barbarian (half-orc 19 con)
and Edwin. Both characters turned lvl 10 and while edwin gained 6 hps my barb only got 3.
Now, how can a human mage with low con get more than a high constitution barbarian? Also, isn't edwin supposed to get any extra spells at all at lvl 10 cause he didn't ;(

For some immensely stupid reason, AD&D states that warrior and priest classes only roll a die to determine their Hit Points for levels 1-9, while rogue and mage classes roll a die for levels 1-10. After that, all classes gain a set number of Hit Points per level, and no longer add their Constitution bonuses.
Edwin would have rolled a 4 and added 2 for his Constitution, your Barbarian got the set number of 3 Hit Points.
As to your second question; yes, according to AD&D Edwin should have gained a few spell slots, but the BG spell tables are rather quirky at times.
