Some I've played also worth mentioning are:
Indiana Jones and the Fate of Atlantis
Ripleys Belive it or Not: Riddel of Master Lu (or Wu or something :D )

The Fate of Atlantis was one of my favs! I have't been able to find that game for years though... :(

I still have them on 3.5 disks, don't know if they work anymore.
Doubt I can even play them, have no dos-drivers or config/autoexec anymore either :(

But it was a great game IMO :)

I can't object to any of your choices, although I found Monkey Island II pretty dull compared to the rest, and Sam 'n Max one of the best things to ever hit the computer. But I'd probably add:

The Longest Journey
Quest for Glory IV
To the Righteous belong the fruits of violent victory. The rest of us will have to settle for warm friends, warm lovers, and a wink from a quietly supportive universe.

All the Lucas Art's ones posted were great, my favorite would have to be Sam and Max Hit the Road (the funniest one!)

I would have to say Grim Fandango, i just loved the characters and the general setting/feel of the game :)

But technically it is not really a point and clicker :) ;)
I'd have to get drunk every night and talk about virility...And those Pink elephants I'd see.
