well the first character i played his style wasnt as much fun as thought so ill think ill go with a combat ready assin this time and i was thinking about taking this

You can take block extra. Personally, I think it's strange to have Heavy armor and sneak+acrobatics, but it's your choice. Personally, Acrobatics isn't that a great skill, I would take atletics instead.

Acrobatics and Athletics go up at such a speed unless you want to level up every game hour there's not much point having them as a major skill.

Entirely agreed, if you run and jump everywhere they both go up in no time. I would suggest grabbing armorer instead. If your being paranoid about leveling up too quickly (weird concept) then I have to disagree with making armourer a major, it'll push you up levels faster than athletics or acrobatics. It's also one of only three skills that raise endurance,and he's already got Heavy Armour as a major. Athletics goes up fairly slowly as a major, and acrobatics is voluntary, you don't have to use it at all if you don't want to.
Armourer is far too important to have as a major, you need to raise it to 50 ASAP so you can fix your enchanted gear. Combine that with not having block as a major, block like crazy, then repair; save all your septims to buy training in armourer, buy five skill points per level, result will be five endurance points every level-up. You also level up at a pace of your own choosing.
Try to avoid having your weapon of choice as a major too, so that you can use it at will without worrying about leveling up too quickly.
For a non magic sword wielding build I'd go for:
Acrobatics (voluntary*)
Athletics (voluntary*)
Blunt (voluntary)
Light Armour (if your using heavy)
Marksman (voluntary)
Hand-to-Hand (voluntary)
Speechcraft (voluntary and totally unnecessary)
* Neither go up if you're sneaking at the same time
It still looks warrior like, but you control you rate of leveling up.
Frankly I think being paranoid about leveling up is silly, just so long as you understand that skill matters more than levels.
My personal preference for a straight warrior build is:
Heavy Armour
Block
Blade
Acrobatics
Marksman
Restoration
Conjuration
I call the class Paladin (conjuration used exclusively for a turn undead/fire damage spell)
Be frugal with the money, using alchemy to make extra pennies (as well as useful potions), buy five armourer skills every level. This should result in gaining five endurance points every level up. As well as using a blade also use a blunt weapon and hand-to-hand to boost strength as well.
The character will level up at a reasonable pace in my experience. If you concentrate on the main quest you should complete the Kvatch quests before you reach fifth level.
