How can I move the camera all the way down so that I have a near first person view ?

Try the driver mode. It's under options. I think it's a lot closer to 1st person view, giving you just behind the character view.

I'm going to have a fighter with super-high dexterity, making him good at both dual-wielding and the longbow. Thus I want to be able to switch easily...

Sword and shield can also be done like this. Stack em in the hotkey to equip both at once. Really nice if switching out from bow or weapons alot.

In Chapter 1 as you complete the quests for the henchman, each one will reward you with a magic item of some kind (like an amulet).

yes you get more quests in later chapters and you don't keep the item that they give you, but rather get an impoved version of the same item.
