There are two separate things being discussed here. You can certainly take skills that perhaps aren't traditionally part of the class (herbalism or stealing with a warrior), but you cannot take specializations that do not belong to the class (so no berserker mages or spirit healer rogues).

Wow, that totally stinks. Crom is one of the most popular SoA items, I don't get why they wouldn't include it.
Wouldn't that really devalue the effort put into making it in SoA, by giving it for free with all ToB characters?
It also encourages people to play Shadows of Amn - if you want the best ...

I don't think the comparison in the OP of this thread is valid. The double-saber has a maximum damage of 24, and each single blade has a maximum damage of 20. That doesn't mean that you deal 40 damage with each dual-wielded strike. In fact, your maximum per hit (without modification) is still 20 ...
