I almost felt sadden when I played Fallout 2 through again last week. The feeling and joy from such games is not likely to come back. If it wasn't because I knew Baldurs Gate 2 inside out, I'd play that again as well.

For me the problem isn't graphics. One of the games I've spend most time with is quake, and that was only about graphics when it was made.
I think it has more to do with entertainment industry playing it safe. Why should you risk developing new game mechanics and interfaces when you can just release civ 63435 and people will buy it because it says "Sid" on the box?
