1. Yes Minsc does eventually attack Edwin if they're both in your party. One by one Edwin teases every NPC in you're party, saving Minsc till last. They have a few dialogues before Minsc actually attacks ...

Well I completed the whole planar sphere quest, but there's still the problem with the knights wanting to get back to their homeland.

In the walkthrough it said you can talk to Ribald or the knights of the radiant heart. The problem is I've tried both of those options, but no-one brings up the ...

Yep Irenicus is truly dead. After fighting him in hell and beating him, you get your soul back and come back to life.

But Irenicus has to stay in hell ...

Hmm...then this must be another sign pointing to BG3...obviously this isn't the last you're gonna see of this guy...and if you don't see him again in BG2 and find out who he is...then there will most probably be a BG3, and somewhere in it you get to meet this guy again.

OK after going into the Trademeet tavern, there's this guy in there who says something like "No! Not another child of Bhaal!", and then gets blasted by some magic out of nowhere, gets knocked out and gets teleported away.

After completing the game I realised that I never saw him after that ...

According to the strategy guide, in Umar Hills there should be 4 merchants outside the tavern, one of them being Fael - the Tanner's helper. But he's not there with the others.

I did the Tanner quest, where he manages to escape by boat while you fight his minions, so I guess there's no reason why ...
