I have not been impressed with the Enhanced Edition. Are you running the GOG version or the original disc version, or some other version? This game engine is old and buggy when it comes to modern software and hardware so errors like this are not surprising to see.

The point of potions is that you are supposed to prepare for fights in advance (more similar to the books). However, they generally do not last very long so you might want to get a mod that doubles or triples potion duration.
