What I can do with meat and fish? If I can do something...are they necessery or not?

Personally I have never found a use for them. But if they do have any use they maybe for some sort of spell ingredients. You could always sell them if they have any value.

In the end of SoU, in the "Temple of the Winds", the meat can be used to lure the big monster thing that deals a lot of fire damage away from where you are. Other than that it doesn't matter. BTW, highlight to read.
