I'm thinking of starting SoU with a fighter/dwarfendefender/weaponsmaster and exporting it to Hou (you should be atleast lvl 15 for that right)
But i know my gaming style and i want to do everything in SoU before i finish it. When I do that will i be to high level for HoU?
I havent played any of the expensions before.

My first time through SoU I finished with a level 12 character, and I finished most of the quests in there. Of couse this was with henchmen all the time, so it is likely possible to gain a higher level.
As for HotU - the manual states that if an imported character has less then 12 levels, the character will be leveled up to 12.
This is also consistent with the end level I had in SoU.
You could however play through SoU with the character from NwN also and thus gain about 2-3 extra levels on that character if you wish - although this would make SoU incredible easy because it is made for a new character. (And I wouldn't recommend this for the first time through SoU).
But there isn't really any problems with importing/exporting across the expansions. So just pick what ever character you want, and go from there.

And when you start as lvl 12 in HoU what level will you reach?
I intend to hit the exp cap, but when you only reach lvl 12 in SoU it wil be hard to reach 40 in HoU.
Why raise the expcap when you cant get to it in the game

Generally - I would think you would end up around level 25-27 in the end of HotU, depending on number of henchmen, missed quest, exploited XP scheemes and so on of course

.
I wouldn't plan for much higher if you are planning character(s)
The reason for the high XP cap, I think, is due to multiplayer and player created modules. Giving the community more to "mess around" with, and more possiblities when making worlds and modules alike.
