What do you all think? I been playing barbarian and got to underdark but when I got there I kinda got bored with him heh. Can't seem to finish the game, always get bored in the end, restarted many times, hehe. I guess I just love trying new classes too much.
Help me out with this guys, thanks.

I'd choose an elf - or halfelf (If elf is not possible).
I'd choose long or swordshorts. Singlehanded at fist (for my, singlehanded all the way, but as you get bored quickly, you can change to dualwield)
Or staves!
Anyways, make your PC along as you go, and if you ever find him boring, change with SK.

I always use a half-elf for my solo F/M/T. Elf is another good choice because of the +1 to Dex that they can get and the bonuses to long swords/bows............ but they also have -1 to Con which I really don't like

Humans arn't as good I don't think, even tho they can get 18 in all stats - they don't have as good resistances as the elf or half-elf.
I take the half-elf because it's the inbetween

No penalties (or bonuses for that matter) to any of your stats, plus they enjoy some minor resistances to sleep and charm like "normal" elves, just not quite as stong.

I recommend elf because of the bonus at long bow/long sword. I always start with long sword ++ two weapon style +++. The lack of constitution doesn't matter while you'll be always stoneskined or mirrored. I prefer dexterity 19.

I am partial to the elf too for F/M/T and ranger. Max the dexterity, dual wield, give him the Telemortis or the Everad sling for ranged attacks and any nice long sword and off he goes.

Some Spoilers
Race: Elf, Dex bonus(theif skills), immunity to sleep & charm. Who cares about the -1 Con.
Proficiencies: 2 or 3* DW & 2*your favorite sword(s) if you are not playing Kensai kit, then 1 or 2 * in Longbox. I recommend Katana if you want to backstab and Scimitar either way. Celestial Fury & Scarlet Ninja-to (only if you have UAI & can't backstab) are a powerful combo.
Level: I think without TOB or mods, you can get to 12/13/14. I might be a level off. Download a mod to remove the cap & the character is a lot more fun.
TOB HLA's: Note, you start receiving HLA's at 3,000,000 experience. You recieve one for every class that levels up this point onwards and get the choice of all 3 classes. Just don't pick the extra spells until you can cast a spell at that level. It doesn't give you the extra slot until you can naturally cast 1 for that level.
Overall, the best solo class in the game. With a ring of regeneration, you don't need anyone else around. In my opinion, this makes you the son of a God that you really are.

Isn't there a "Max-Hit Point Roll" option?

Yeah, if you put the difficulty on easy you always have a max roll.
(if i remeber correctly)
A f/m/t is a great class to solo, and in my opinion the easyest one.
You can get an incredable high level, low taco and low AC while wearing only a robe (cause you're on youre own you can wear all the good items)

No, or maybe when you have a constitution of 1 or something.

I know that after a certain level you get less hitpoint (IIRC)
But I think someone else can explain this better.
Have you checked the manual?

Yes 4 hp when you level up as a fighter would be correct.
With a 17 CON you would normally receive 13 hp. Since you are triple class, you will recveive 13hp/3 classes = 4.33 rounded to 4 hp.
When you level up as a theif it should be 8hp/3classes=2.67 rounded to 3 hp. As a mage it would be 6hp/3classes = 2 hp.
Hope that clears things up.
