When I was a kid I was fascinated with all those DYNORAMA special effects shown in the movies "Clash of the Titans," "Jason and the Argonauts" "Sinbad and the Eye of the Tiger(?)"

A few faves:
Company of Wolves (mix of horror and fantasy based on short stories by Angela Carter)
Ladyhawke
Flesh and Blood (bizarre Rutger Hauer movie)
Cocteaus Beauty and the Beast, Fable's right it's a lovely movie
Into the West
lots more but my brain doesn't have enough caffeine to function properly yet

I'm glad you mentioned this.
I actualy just saw it a couple of weeks ago for the first time.
I had heard good things about it, especialy from Roger Ebert (Who I love, best reviewer ever), but was very reluctent to see it.

I was thinking- a mid 80's fantasy flick with Rutger Hauer about two lovers who shapechange, and directed by D!ck Donner, who made a spoof of Superman.

But finaly, after 18 (+-) years, I saw it at Blockbusters for free, so I ran out of excuses.

It was a very good movie. Rutger Hauer was actualy likable, something he would not achieve again till this year's Confessions of A Dangerous Mind.

My only complaint towards it is the music. This one of the only movies brought down by it's score. That terrible 80's sound just ruins a lot of the movie.

But it has some very good dialogue and twists. Recommended.

I forgot about Monty Python and the Holy Grail! Though I consider that more of a comedy than a fantasy, I guess it'll count in this case.

The music is one part that was fairly controversial; many people who enjoy medieval period movies (SCA-type folks) thought the music was just out of place. Still, the movie itself is one of the better ones out there.

Another film to add to the list:
Clash of the Titans (or any Ray Harryhausen movie for that matter)

Not the best but this movie catch my attention on how detail the produceer & movie maker efford are : Final Fantasy the Movie. Take close look on Aki Ross hair, the hair movement are so detailed to match live natural hair movement which make the char almost alive despite the fact they are CGI drawn. it also come to my attention that programming such thing are not easy, which explain how other chars either bald or crewcut style. I guess if they wanna make other chars like Aki Ross style they gonna need one helluva time to program the movie after all

The movie was bad, but it was worth seeing for the CGI alone.

Well, I think "fantasy" covers a lot (science fiction too?)...my picks are as follows:
LotR: Fellowship of the Ring
The Empire Strikes Back
Return of the Jedi
Monty Python and the Holy Grail
The Matrix

No, I didn't like it much either...
Too little happends in the movie and it has nor a beginning nor a end. (the fate of a 2e of 3 movies)

I don't know if these are my favorites, but they deserve a mention-

Who Framed Roger Rabbit- One of the most complicated movies to make, it came through in spades. It succeeds flawlessly with integrating cartoons and real people, is always aware of what it's doing, has tons of great jokes, cameos ("Relax, it's just dumbo!") and is just a pleasure to watch.

Miyazaki's Spirited Away- One of the best animated movies ever, Miyazaki creates a whole envirment, a huge cast of creatures and characters, with the best hand drawn animation ever, and a magestic and magnificent score by Joe Hisaishi, who perfectly blends Eastern and Western Musical influences to fit this masterpiece.
The film is also perfectly dubbed to english by John Lassiter and his Pixar crew.

Dark City- A precurser to the Matrix, this magnificent and visually amazing movie was sadly overlooked by nearly everyone.
The F/X in this movie are some of the most awe inspiring ever- especialy the astounding revelation shot, which is IMO one of the top 3 F/X shots of all times.
Rufus Sewell, William Hurt, Kiefer Sutherland, Jennifer connelly and Richard O'Brien are all great in this part Film Noir, part Sci Fi movie, drawing huge inspiration from Fritz Lang's classic Metropolis, but also, less noticably, from Lang's Nosferatu and M.
