I'll echo the general sentiment and say that it's up to everyone to choose if they want to use mages or not. They can make the experience easier and more fun but you don't absolutely must have them. The example I tend to use is when I went through the game with 6 rangers, 3 pure class and 3 archers....

Sounds like you just needs to rest to me. All pc's with spellcasting abilites starts the game without any spells memorised, and in the sorcs case without spellcasting opportunities ready. One rest and they should be ready.

Actually you can, but you must have the thief HLA Assassination. With that any attack with any weapon in the next round counts as backstab. ;)

I've found that simple hit and run works well against him. Just run to another area and wait until his protections wears of. Then go back and start whacking. Might be cheesy (not to mention cowardly) but if you can't stand up to him in a fair fight it's a solution.
