Go to Dark Fissure, put your empty grand soul gem inside the alter, wait for the right night when the moon shines on the alter and then cast soul trap on shrine. The grand soul gem should be turned into a black soul gem. I believe you can only change one gem at a time and only one per week. Its a real pain in the rear IMO.
