Two questions:

Does encumberance affect your ability to swim, can you swim faster with less stuff in your inventory?

And why does my unarmored skill increase when I'm fighting slaughter fish in the water? I'm wearing armour.

yeah encumberence has affect on any type of movement walking, running, or swimming.

your unarmored skill appears to always have a small chance of going up when you get hit, even if you are wearing a full suit of armor.

I tested this out once - I wore a full suit of medium armor and let a creature hit me a bunch - you can actually hear that some hits do not have the clank sound of armor getting hit. I would say maybe 1 in 10 hits will count towards unarmored even if you were full armor.
