I suggest plenty of healing potions, as well as fortify health, fortify attack and fortify strength.

You might also want to try an enchanted weapon.. I was fairly low level when I offed him last time round and I found my ebony staff, enchanted with both paralyse and poison (cast on strike), worked like a charm

Paralyse or blind him. Have an enchanted item that allows you to levitate to restore yourself...

Summon stuff to distract him... Try bound weapons/armour...

Levitate with a potion of rising force or spell (Travel-stained pants that you got from Cavern of the Incarnate works well), then rain magic and ranged weapons down at him.

Personally, I just whacked him on the head with a steel katana enchanted with 27pts fire damage, but I was level 20+ and maxed out strength and endurance.

If you're really, really having problems taking him down, you could just skip it for a while and come back doing it later?

This is only an idea and might not work. Get a high hand to hand level and run like a maniac. When your fatige is empty use a potion or spell. Then turn around and whack him until he falls. Then kill him with scrolls. Make sure you take the daedric Katana.
