Recipes Using Red Wine

I have about two bottle left in the fridge and rather than just drink them I thought I should probably make something even better with them, so what are your suggestions for the quintesential wine incorporated food.

Red Wine in your spaghetti sauce is always good - maybe in place of the vinegar.

A cup in your chili is also good....

Yeah I figured something along the lines of spaghetti sauce, I did think of Coq au Vin with red wine sauce but I couldn't find any decent recipes.

Venison Roast:

In a crock pot combine :

Venison roast Brazed in skillet
4 cps red wine
6 cloves of garlic
salt
cracked pepper
basil
1 red onion sliced and layered over roast
1/2 cp good olive oil drizzled over roast

cook 6-8 hours on medium

Serve with black bread and real butter

Vegitable suggestions:
baby asparigus
savory roasted red potatoes

A good merlot

Apricot flambe'

Mmmmmmm.......Yum !
