Your character is a singularity. Instead of being a dual-class or a multiclass, you are a sort of multi-singleclass. You can be a fighter, a thief, and a mage, but only use one set of skills at a time.
You begin as a fighter. There are characters you'll encounter who can initiate you into the thievish and magely arts. While a fighter, thief or mage, you only gain experience in that profession. Once you've learned the basics of a profession, you only need to speak to a specific NPC character in your party, and you'll be able to switch to it. There is no experience cap to any of the professions.
Hope that helps. I'd give more straightforward hints, but I don't know how much you want to actually know.
