That depends on what you want more. Are you going for a finesse based monk? If they fixed the problems in NWN 2 from NWN, I do not know if they did...you should be able to have a high Dex and take Weapon Finesse: Unarmed Strike. You can then use Dex as your ability to affect your chances to Hit, Dodge bonus to AC and Ref saves. This will make it so you don't need to keep your Str as high. Useful when dealing with the Monk as they need good attributes in 4 out of 6 abilities.
To be honest, it all depends on what you plan on doing. In a rating of what I happen to think is most important in a monk that does not focus on high damage, this is in order:
Wis
Con
Dex
Str
Int
Cha
If you want a higher Dex and taking Weapon finesse this changes:
Dex
Wis
Con
Str
Int
Cha
If you want high damage it goes like this:
Str
Wis
Dex
Con
Int
Cha
The thing to note, Wis is better for monks for AC. Why? It applies to AC unless they are encumbered, wearing armor, or unconscious or held. Dex bonus to AC can be taken away easier in combat. So, Wis is more useful for AC. However, Dex allows your Evasion ability to work better.
I wouldn't suggest taking a race with a LA for monk. Unless you plan on taking Deep Gnome and basking in the glory of a +4 bonus to Dodge AC, and +1 to Attack and AC from small size, spell-like abilities and Spell Resistance. Of course, you will be 3 levels behind everyone else. Which really hurts as a monk, but you won't be hit too often.
A suggested race would be an elf or better yet, a Dwarf. A standard dwarf gives you a bonus to Con and a penalty to Cha, which works wonders for any monk build. The races penalty to speed is offset by the monks fast movement ability. I am not sure if the developers included the dwarves Stability bonuses in NWN 2, but they should be harder to trip or knockdown. If they did, this will be good for you when fighting melee characters.

Heh, you enjoy picking the most attribute dependant classes involved in the game, don't you? Monks and Paladins are the two hardest classes to do well in the DnD gaming system.
Tell me what you want for a character to be doing, and I will give you a decent build for it, how about that?

I am not expert and I hope someone will correct me if I am wrong.
Think you only need to get your Dex to 15 to get the Spinning Kick and dump the rest of your points in Wis.
As a Human you don't get any negitives and get more Feats.
With the really nice Perpets of Wisdom +4 is very common and I think you can get or make at least a +6, so I would advise against trying to use your Dex higher since as a Monk you get higher AC with Wis.

Well, that depends on what you want to do with your character.

| | That's not much help there in giving us direction in where you want to go. So, here's the best you'll get. Half-orc. Give yourself an 18 Strength, 14 Dexterity, 14 Constitution and 14 Wisdom. If you have any points left over to be allocated, dump them into Wisdom to start. If you end up with an odd number in Wisdom, when you hit level 4 add 1 point to it and make it an even number. Keep putting the rest into Wisdom as well.
Take your 1st level feat as Luck of Heroes to boost your saves and AC all by one. This AC bonus is great for a monk, and the save bonus will make you one step closer to being nearly immune to spells and traps. Take the feats Power Attack (3rd), Cleave (6th) , and Great Cleave (9th) first off. Improved Critical: Unarmed Strike at 12th. Very basic, combat ready monk build for you.

Hmm. You would lose out on end abilities, and you would progress slower, and that is highly unsuggested for a monk. However, the +2 to Wis would help you.
Attributes: Str 13-14, Dex 14+, Con 12-14, Wis 18, the others as low or high as you can get them so long as you end up with these starting stats.
Feats: Power Attack, Cleave, Circle Kick. The rest, those are up to you. Maybe some of the folks who have played further than chapter 1 can advise you on what you will expect.
