Are there any games out similar to Everquest?

Im looking for a good rpg that has non-static dungeons like in Everquest. Does anyone have any suggestions or does this exist?

When you say non-static, do you also mean multiplayer? If that's the case, you may want to check Asheron's Call, or even a text-based multiplayer RPG like DungeonRealms or Gemstone III.

For singleplayer, I know that some BG2 dungeons respawn over time; but I'm not sure which ones, or at what rate.

Try Diablo 2 if you are not that interested in plot in a RPG. Everything is randomly generated every time you play the game. If you are really into story and plot, then you'll probably be disappointed by Diablo 2.
