Can I choose a lvl in fighting, therafter choosing a lvl in Paladin, and then pick a lvl in fighter again?

Absolutely. However, I would suggest you read the first few posts in Kayless' Guide to Multiclassing. It's a sticky thread, at the top of this board. That should give you a good, thorough understanding of how to use and not get screwed by doing a multiclass character with 3E rules.

Yeah, there's only one paladin type you can do that with and take more than 1 level of paladin in...
