Does the book Deities and Demigods contain the full stats on Tiamat?

Well, back in the old days, she was in the monster manual with the rest of the dragons. Of course my monster manual is 25 years old. However, in the time frame of which I'm speaking she was not in Deities and Demigods, as she is neither nor belonged to any pantheon contained within.

Well I recall her being in there, but I can't remember to what extent.

They're the only D&D books I have. I never graduated to newer versions of the game, though I haven't really played in 15 years.

Her D&D/Oerthian aspect, yes. Her full Faerunian/FR stuff, no.

You can find some FR stuff (general info, History/Relationships and Dogma but no stats) in Faiths ans Pantheons. I could write it down for you if you want, it's not that big (about 3/4 of a page and I need practice typing).

You can probably find out anything you need to know from an old Dragonlance supplement, if you have one...
(isn't it a law of the gaming world that everyone who started gaming before 1998 will have bought a Dragonlance supplement that they never used again? )

I started playing D&D when it was just that...D&D. No advanced. No second edition. Heck, not even a basic. That didn't come out until a few years later. I don't think I ever purchased a Dragonlance supplement. It would be interesting to see the differences between a Dragonlance version of Tiamat and the one in the Monster Manual.

I thought it was Takhisis in Dragonlance, not Tiamat.

It was yes. They simply fleshed out the same basic concept for the deity under a different name and gave her a personality.

So was Paladine supposed to be Bahamut, then? The description I have for Bahamut reads that he's fond of appearing as an old, frail man.

Aramant, I always thought Paladine was the Krynn equivalent of Bahamut. Wasn't Fizban the form Paladine took when he walked Krynn? I don't remember.
