| Have you seen AC of your characters after one and two Potions of Mind Focusing?  And so it stays for 12h. I feed it even to Minsc, it can use protection scrolls himself after that  Note, there is plenty of that potion in the game, too.
Potions of healing is of some use for me, too, but not too often, mostly for the hardest fights only. I have almost never bought one, what i've picked up is nearly enough.
Though there might be a difference in playing style, i see.

As thief the potion of invis. is by far the best in my opinion the abillity to backstab multible times in "same battle" without having to run to then again hide in shadow.

potion of speed is very valuable early on in the game when you have no haste spells.

Obviously it depends a lot on class, but I vote for potion of Mind Focusing and oil of Speed.

Potion of extra healing comes in handy when fighting golems! Those suckers really take you down!
But potion of invisibility gotta be a favourite of this Assassin!
For my mage, potion of mind focusing comes in handy.

| BTW, the Oil of Speed works as Improved Haste, so even better
