What's up with the scrolls?

So I've started BG now and it's a whole lot of fun, as promised.
However, everyone's inventory is now cluttered up with scrolls that no one seems to be able to use. The only one that I've been able to use (by putting it in the quick use slots) is the Stone To Flesh thing to get Branwen.
Is there a trick to using scrolls? Surely they can't all be mage spells.
I have me (Fighter), Jaheira, Minsc, Imoen, Kivan and Branwen, everyone level two or three
Am I using these wrong?

I guess they're really all mage scrolls.
There are only a few scrolls in the game which are useable by all classes.
Priests scrolls are not very common since priests can cast their spells without them while mages have to find scrolls and scribe them before they are able to memorize the spells.

I'd store the important mage scrolls in a container in the FAI or somewhere else, so you can use them later if you want to add a mage or bard to your party.
I'd sell double scrolls and scrolls of spells you'll never use, i.e. all spells
if you want to play the whole game without arcane caster.
