The characted creation and customization is VERY complex. You have 8 basic stats, 20 skills, 12 tech disciplines with 7 levels each and 16 magic colleges with 5 levels each. There is also alignment which determines how the NPCs will react in your presence. So, the short answer would be: a lot.

Yes, most NPCs are active during the day and sleep during the night. Most shops follow that procedure as well, although you'll find several shops throughout the game that don't have a fixed time schedule or work only during the night.

Everything you do in Arcanum has its consequences. There are reputations that can be made throughout the game that will make you more or less desirable in certain towns and cities.

Yes for all. Otherwise it wouldn't be a role-playing game, would it? Be it a dark mage, thief, technological maniac, uptight snob, assassin, or anything else for that matter, your game experience will change according to the path you choose. Yes, you can own a mansion and a ship.

And again, yes. There are numerous different sidequests throughout the game, from buying a deed to an old sliver mine to negotiating an alliance between kingdoms.
