| I think you answered your own question. There should only be 4-5 echinopsae in the cave, so if you've killed way more than that, then they re-spawn each time you go in.
Going by your other thread, it sounds like you need to learn how to brew potions. You won't get very far without potions. In this case, a Swallow potion will allow you to regenerate your health without leaving the cave to use a campfire.
