I don't count Kreia as a Grey Sith, really. She didn't adhere to the Code, after all.

Kreia, while a character of the calibre of some Planescape characters I could mention, is not a Grey Sith. She's a Dark Jedi.
A Grey Sith would be a force adept who adhered to the Sith Code while not being a psychotic loony.

The Jedi don't believe in using the Force to stave off natural processes. Dying after taking a blaster shot in the gut is what one could count as a natural process. There's a reason Anakin turned to the Dark Side for healing; The Jedi don't heal, they callously let things take their course.
