This always seemed like a cheesy tactic to me. But, I digress. Certainly, it's a way to get even more monstrously powerful than you already become in the game.And if that's what you're looking for, definitely do that in the first game.

It seems to me that if you want to make the game more "intense", you'd do things to make the game more challenging. Fable's suggestion of utilizing just one teammate or, alternatively, using some of your weaker (i.e. non Jedi) allies is solid. You might step away from using two weapons, and focus on a single light saber. Don't pause and save very often, etc. Obviously, play the side of the force that you didn't the first time through, as well.

However, if you're more interested in min/maxing stats, all you really can do is what others have suggested, do every possible side quest. If you want to max out attributes, to the best of my knowledge you'll have to use cheats.

Finally, if you have the PC versions you might try out some user created mods. I've yet to do this, as I didn't find the games to be some of my favorites to replay. However, I know there are a lot of different mods out there. I believe that the Taris Upper City Emporium is where a lot of mod announcements get posted.
