Dual-classing is simple. Roll up a character that meets the stat requirements, play the game and level up until you want to dual the character to another class, and then hit the Dual-Class button. The first class will be inactive until the second class is one level higher than the first class.

If you stop playing when you finish playing Shadows of Amn (instead of playing all the way through Throne of Bhaal), or if your characters only have 2,950,000 experience points, then dual-class characters are better than multi-class characters. On the other hand, if you play Throne of Bhaal or if your characters have well over 3 million experience points, then multi-class characters are better because of all the High Level Abilities you can use.

It's also easier to get a good stat roll when you're creating a multi-class character, because the minimum rolls are higher than if you're rolling a single-class character that you intend to dual-class later.

As for weapon selections, only being able to use blunt weapons is not as restrictive as you might think, considering all of the worthwhile blunt weapons you can use. Crom Faeyr +5, the Flail of Ages +3, and the Improved Mace of Disruption +2 (it actually counts as a +5 weapon) are great weapons to use in your primary hand in Shadows of Amn, and the Defender of Easthaven (which is a +3 weapon in some mods) is a great off-hand weapon. When you play Throne of Bhaal, you can upgrade the Flail of Ages to a +5 weapon, there are new weapons such as the Runehammer and Storm Star, and you might even decide you'd like to use a powerful quarterstaff such as the Staff of the Ram +6. Swords aren't the only weapons that are cool and powerful.

If your Cleric/Ranger ever uses the Sling of Everard +5 (which can create its own ammunition), go ahead and equip it with magical bullets. The attack bonuses are stackable. It's pretty cool to do over 20 points of damage in one hit.
