If you want a three-member party, I recommend:

Fighter/Thief (take advantage of backstabbing, medium-weight armor, and Use Any Item)
Cleric/Ranger (take advantage of Ironskin, Turn Undead, Stealth, and all sorts of spells)
Sorcerer or specialized Mage (there are all sorts of strategies to use)

Spell combinations like Greater Malison + Glitterdust + Emotion can really soften up enemy parties, which really helps at lower levels, and at higher levels, Time Stop + Improved Alacrity + Horrid Wilting x 3 or Dragons' Breath can wipe out many of them before they can even lift a finger. For melee-intensive battles with magic-resistant opponents, all options are on the table--backstabbing, traps, summoned monsters, Lower Resistance, Whirlwind Attack, etc. It might be more fun than a two-person party.
