I first played BG1 with an elven fighter,mage,thief. As a multiclass you can manage with a very small party and hence you level up very quickly. With fighter, mage, thief or fighter thief, it is not that difficult solo. You just have to use the strengths of each class. Thieves for traps and sneaking past bad guys, mages for using wands, and fighter for raising your health and ability to hit. I have heard however that you don't get some of the specialities in Throne of Bhaal if you have three classes rather than two.
