| I usually do it on the person that gives you the quest. I just steal from his house, he attacks then once he is unconscious you have to cast the spell from the scroll (not once he gets up again). While he is unconscious you can also steal all his other scrolls and finish looting his house lol. Then when he finally gets up again you can talk to him and he won't remember that you have robbed him blind and beaten him up.
If you are having trouble early on with beating him up, try purchasing a sleep scroll. Cast it on him and when he falls asleep just keep beating him.
If you kill someone with a spell or arrow they are permanently dead. you have to use melee to knock them unconscious.
Edit: It is important to cast the spell on them while they are on the ground unconscious. If you do it when they get up again or if they are still standing then it won't work
