Question Leveling up in BD

Greetings Gamers!
I suppose I'm what you may call "the new guy", and I'm actually just new to forums (all together). ANYwho, I was wondering if any of you fine people out there may have some advice on how to level up in Beyond Divinity (specifically speaking in the first Act, because I haven't gotten any farther! )?? In Act 1, I've completed all the quests I think I possibly can, killed everything I believe that I possibly could, even EVERYthing on the Act 1 Battlefield (and the first and second dungeons), and I'm STILL only level 9! The deathknight gaurds on the training grounds, I believe, are level 13, and I'm using WAY too much potions, and there are WAY too many of them. HELP! Also, what's the point of the things you can't actually "interact with" in the game (i.e.: mushrooms in the grass, etc.). On top of that, what's up with the "cap" on how many potions you can brew? ALSO, almost everyone I went to to "train me" gives training for level 5 or higher. Why so high? I know I maybe asking alot of questions, but I'm new to this "game series", and looking for a little help. Not asking for spoilers or anything, but I just feel like "the fat kid trying to reach for the cookies at the top of the fridge, but can't reach them". There's alot of things in this game I don't seem to grasp (as in missing SOMETHING) and I don't want this to be one of those games I just "give up" on. I really like this one, but so far, it's not like those games like Final Fantasy, where you can go "out" and get into as many fights as possible to help level up. Anyway, I hope you all had a good turkey day! Any kind of help is greatly appreciated, and if you have any questions on other games (that i have ) I'll try my best to help, in return. Thanks again!
