For what it's worth, I'd suggest running Morrowind, with or without its add-ons, and with very few mods. Your memory can't support many. I've seen several veteran mod creators insist that 256 MB RAM as a basic requirement for running Morrowind minus anything else. That said, you could try adding a few smaller mods that look particularly attractive to you; but IMO, stay away from the large quest, housing mods and the furniture/plant add-ons.
There are also a couple of texture mods that actually increase speed slightly, if that becomes a problem for you. I can post links to these, but as they change the "look" of Morrowind slightly, you may want to decide first whether you like things just as they are on the PC.
