After awhile I realized it was totally unnecessary to use force powers in the entire game.

The game is beatable without using force powers, naturally. But what you probably don't realise is that it's vastly easier with force powers. If you've never done it, how can you really know? How about wearing robes your next playthrough and using force speed liberally?

I know the manual staes that the Strenght bonus affects lightsaber "to hit" rolls, but after experimenting with strength and dexterity boosting items the Dex bonus is what affects the "to hit" roll, while Strength does affect the lighsaber damage bonus.

I don't know what kind of experiments you ran, but this is just dead wrong. The higher of strength or dexterity is applied to your lightsaber's attack bonus, not both at once - it's the same on both versions, and I've played them both more than enough enough to know.
