I tend to take all the NPC's at least long enough to get their quests done. The one I probably use the least is Korgan (as I tend to play good/neutral aligned characters), I usually complete his quest early and then end up stripping Korgan of all his equipment and then dismissing him, before I provoke him into a fight and kill him  . Cernd I think is probably the most useless and after the Druid grove and other quests related to him I just ditch him. Another character I quite often don't use is Keldorn, I normally let him go back to his family - he is an old man after all.
I like to interchange my party as much as possible to keep things interesting and each time I am always surprised by the things that come up - a testament to how great a game it truly is!
